These Peanut Butter Energy Balls are a great healthy snack and so easy to make. These can be kept in the freezer for a quick snack anytime of day.
Most recipes for energy balls make about 10 balls. What are they thinking? Who would eat only 10. Therefore, I changed the recipe to make a full cookie sheet of these balls.
2 c oats (old fashioned, not fast cooking)
1 c peanut butter – Here is my recipe for homemade peanut butter
2/3 c honey
2 t vanilla
3 T flaxseed
3 scoops vanilla protein powder
1/2 c chocolate chips
Combine all ingredients.
Once mixed well, form into about 1-inch balls and place on a cookie sheet lined with parchment paper.
Place cookie sheet into the freezer. I let mine sit overnight. Once frozen, place balls into a zip lock bag. Keep them in the freezer and enjoy.
